You don't have to be an experience cook/chef. Most classes are designed for home cooks. Where you need additional experience, it will be noted in the information on the particular class.Paul van Reyk

Kinds of classes

Classes come in two styles. Demonstration and tasting only are classes for large numbers (anywhere from 16 – 50 plus) where I stand out the front and cook for you while you watch and take notes; then you taste what I have cooked.

Sometimes I will ask participants to come up and do some prep work - part of the fun of learning new techniques particularly. Hands on classes are usually smaller, under 20, depending on the venue and how many cooking stations there are for the participants.

Usually, I will demonstrate a couple of dishes and then the participants break up into small groups, cook the dishes themselves, and then we all sit down and chow down.

Numbers in each class
These will vary depending on whether the class is a hands on or a demonstration only. Hands on classes usually work on the basis of 4-6 persons per cooking station in the venue, and that will vary with the venue and the host of the session.

Recipe notes

Participants at all classes get a set of notes on recipes, techniques and Providores.
